Baked Butternut Squash with Apples

2 T. butter

½ ground cinnamon

¼ t. nutmeg

5 c. ½ in-inch cubes butternut squash (about 1½ lb.)

4 c. cubed Granny Smith apples

½ c. maple syrup

1 T. balsamic vinegar

¼ c. chopped pecans, toasted

 

Directions:

Heat oven to 375º.

Place butter in 13 x 9-inch glass baking dish. (3 quart)

Heat in oven 5-7 minutes or until melted.

Stir in cinnamon and nutmeg into melted butter.

Add squash.

Toss to coat.

Cover with foil.

Bake 20 minutes.

Meanwhile, in a large bowl, mix apples, syrup and vinegar.

Pour apple mixture over squash.

Cover and bake ten minutes.

Stir and bake 5-10 minutes longer or until squash is tender.

Stir before serving and sprinkle with pecans.
