Black-Eyed Pea Cakes

3 c. leftover flavored black-eyed peas

½ c. cooked bacon, chopped

1/3 c. roasted red peppers

flour (for binding)

salt and pepper

1 T. butter

1 T. vegetable oil

Directions:

In a medium bowl, coarsely mash beans with a fork.

Add bacon and roasted peppers and mix slightly.

Ass enough flour to hold mixture together.

Season with salt and pepper.

Shape into four patties.

Melt butter and oil together in a large skillet over medium heat.

Add patties and brown on both sides until crispy.

Yield: 4 patties
