(Potato Pancakes)

1 lb. baking potatoes (about 2 medium

½ small onion

3 egg whites

2 tbsp. all purpose flour

salt and pepper to taste

4 tsp. vegetable oil, divided

Directions:

Wash and scrub potatoes.

Cut into chunks.

Combine potatoes, onion, egg whites, flour, salt and pepper on food processor.

Process until almost smooth (mixture will appear grainy).

Heat large nonstick skillet 1 minute over medium heat.

Add one teaspoon oil.

Spoon 1/3 cup batter per pancake into skillet.

Cook until golden and turn.

(About three minutes per side.)

Repeat with remaining batter, adding oil with each batch.

Serve with chunky applesauce.
