DIRECTIONS:

BATHE FISH IN OLIVE OIL.

                         SEASON FISH WITH SALT, PEPPER, CAJUN SEASONING AND PAPRIKA.

        SEASON THE FISH BATTER SEASONING WITH CAJUN SPICES.

AFTER FIRST SEASONING OF FISH, REFRIGERATE.

WIPE CAST IRON SKILLET WITH OIL OR SPRAY.

HEAT SKILLET UNTIL VERY HOT.

ADD 2-3 TABLESPOON VEGETABLE OIL.

PUT FISH IS FISH BATTER MIXTURE.

PUT FISH IS HOT PAN OVER MEDIUM HEAT.

BROWN AND TURN.

BROWN.

DRAIN ON PAPER TOWELS.
