CONCH SALAD

     3 LBS. CONCH, CLEANED, TENDERIZED, AND FINELY CHOPPED

1-2 HOT PEPPERS, MINCED

2 STALKS CELERY, FINELY CHOPPED

1 ONION, FINELY CHOPPED

1-2 BELL PEPPERS, FINELY CHOPPED

1 CUCUMBER, FINELY CHOPPED

2 FIRM TOMATOES, FINELY DICED

1/2 SCANT CUP LIME JUICE, FRESH

 

DIRECTIONS:

     SOAK CLEAN DICED CONCH IN SALTED WATER.

RINSE AND DRAIN.

 MIX ALL IN MEDIUM BOWL AND LET SIT FOR A WHILE UNDER

REFRIGERATION FOR AT LEAST 1 HOUR.
