Crab Quiche

½ -1 lb. crab meat*

4 eggs

1¼ c. milk

¾ c. light cream

salt and pepper

1¼ c. shredded Swiss cheese

1 onion, diced and sautéed

2 T. butter

1 T. flour

1 refrigerated pie crust (follow package directions)

Directions:

Sauté onion until translucent.

Place onions in bottom of the crust.

Mix the eggs, cream, milk, salt and pepper.

Fill the shell and top with the Swiss cheese.

Bake at 375° for 30-40 minutes or until a knife inserted in the center comes out dry.

Cool for 10 minutes before carving.

Can also be served room temperature.

Yield: 6 servings

*You can substitute shrimp, broccoli or asparagus.
