Curry Goat or Chicken
1½ lbs. goat or chicken parts
1 bunch green onions, chopped
(use the green part only)
salt and pepper
garlic cloves, chopped (as desired)
thyme, to taste
2 heaping tbsp. curry powder
white potatoes, diced
green pepper, diced
vegetable oil.
Directions:
Rinse the meat and pat dry.
Season the meat with salt and pepper.
Chop the onions and garlic.
Rub over the meat along with thyme,
curry powder and green pepper.
Cover and let marinate over night.
When ready to cook, rub the
seasonings off the meat.

Brown in oil over medium heat.
Add the diced potatoes and the
seasonings you removed from the meat.
Add ¼ cup water.
Bring to a boil.
Reduce heat to low.
Simmer until tender.
Serve with peas and rice.
