2 TBSP. WATER

1/4 TSP. SALT

1 TSP. BUTTER

2 TBSP. INSTANT POTATOES

1 TSP. VANILLA

1 LB. CONFECTIONER’S SUGAR

1 TO 1-1/2 CUPS COCONUT

CINNAMON AND SUGAR FOR COATING

DIRECTIONS:

HEAT MILK, WATER, SALT AND BUTTER TO A WARM POINT.

ADD INSTANT POTATOES.

REMOVE FROM STOVE AND ADD VANILLA.

ADD CONFECTIONERS’ SUGAR SLOWLY, BEATING AFTER EACH ADDITION.

AFTER SUGAR HAS BEEN ADDED, ADD COCONUT.

IF TOO STICKY, ADD MORE SUGAR.

REFRIGERATE IF TOO STICKY.

ROLL INTO SMALL BALLS RESEMBLING POTATOES.

ROLL BALL IN A MIXTURE OF CINNAMON AND SUGAR.
