5 EGGS
1/3 CUP MILK
SALT AND PEPPER TO TASTE
1/8 TSP. PAPRIKA
2 TBSP. BUTTER
1/2 C. CHOPPED GREEN PEPPER
1/4 CUP CHOPPED ONION
2/3 CUP CHOPPED HAM
1 CUP GRATED CHEESE (OF CHOICE)
DIRECTIONS:
BEAT EGGS WITH MILK IN A LARGE MIXING
BOWL.
ADD SALT, PEPPER, AND PAPRIKA.
STIR WELL.
PUT 1 TBSP. BUTTER IN OMELET PAN.
HEAT OVER MEDIUM LOW HEAT.
IN ANOTHER SKILLET, MELT 1 TABLESPOON
BUTTER OVER MEDIUM HEAT.
ADD GREEN PEPPER, ONION, AND HAM
COOK FOR 5 MINUTES.
POUR EGG MIXTURE INTO OMELET PAN.
LIFT EDGES WITH A PANCAKE TURNER AND TILT
PAN TO LET UNCOOKED EGG RUN UNDERNEATH.
WHEN EGG IS ALMOST COOKED THROUGH, SPRINKLE GREEN PEPPER, ONION, AND HAM MIXTURE OVER HALF OF EGG MIXTURE.
SPRINKLE WITH CHEESE.
FOLD OTHER HALF OVER.
