Dressed Seafood Po’boys

10 eggs, lightly beaten

2½ c. milk

2 lbs. cornmeal

1½ lbs. flour

12 lbs. medium shrimp, shelled

or

36 dozen oysters, shucked

3 qts. mayonnaise

10 cloves garlic, minced

2 tbsp. hot sauce

48 hero rolls (6-inches)

3 lbs. shredded lettuce

12 large tomatoes, cut in strips

Directions:

In a large bowl, combine eggs and milk.

In a shallow pan, combine the cornmeal and flour.

Dip the shrimp/oysters in egg mixture, the cornmeal mixture.

Deep fry in hot oil until golden.

Combine mayonnaise, garlic and hot sauce.

Slice I inch off end of hero rolls.

Scoop out soft insides.

Spread the insides of the roll with the mayonnaise mixture.

Spoon in seafood, lettuce and tomatoes.

Serve hot.

Yield: 48 sandwiches
