2/3 CUP WHITE CORNMEAL

SALT AND PEPPER TO TASTE

3 LARGE GREEN TOMATOES, SLICED

1 LARGE EGG, SLIGHTLY BEATEN

VEGETABLE OR OLIVE OIL

DIRECTIONS:

COMBINE CORNMEAL AND SALT AND PEPPER.

DIP TOMATO SLICES INTO EGG.

DREDGE IN CORNMEAL MIXTURE, COATING WELL ON BOTH SIDES.

ADD 1 LAYER OF COATED TOMATO SLICES TO HOT OIL AND

FRY UNTIL GOLDEN BROWN, TURNING ONCE.

DRAIN, SET ASIDE AND KEEP WARM.

REPEAT PROCEDURE UNTIL ALL SLICES ARE COOKED.
