Great Pumpkin Cookie

2 c. all-purpose flour

1-1/13 c. quick oats

1 t. baking soda

1 t. cinnamon

½ t. salt

1 c. butter of margarine, softened

1 c. brown sugar

1 c. granulated sugar

1 c. LIBBY’S ® 100% Pure Pumpkin

1 large egg

1 t. vanilla

¾ c. chopped walnuts

¾ c. raisins

Directions:

Preheat oven to 350º.

Grease baking sheets.

Combine flour, oats, soda, cinnamon, and salt.

Beat butter and sugars in a large mixing bowl until light and fluffy.

Add pumpkin, egg, and vanilla.

Mix well.

Add flour mixture and mix well.

Stir in nuts and raisins.

Drop by ¼ cup dough onto prepared baking sheets.

Spread into 3-inch circle or oval.

Bake for 14-16 minutes or until cookies are firm and lightly browned.

Cool on wire cooling racks.

           Spread icing or peanut butter on cookie. Make pumpkin faces using above ingredients and your imagination.
