Home Fried Butternut Squash
1 onion, sliced (yellow or red)
1-2 cloves garlic, minced
2-3 T. vegetable oil
4 c. small diced butternut squash (peeled)
salt and pepper
minced chives
Directions:
Sauté onion and garlic in the oil until the onion begins to caramelize.
Add diced squash and cook over medium heat until the squash is tender and begins to brown.
Yield: 4 servings
(Another way to prepare at the same dish is to add a pinch of
thyme to the mixture and at the end, stir in 3 cups of baby
spinach just until the spinach wilts. Then add 3/4 cup of
craisins.)
