Honey-Nut Goat Cheese Balls

4 oz. medium-firm goat cheese

½ c. honey-roasted peanuts, finely chopped

honey for drizzling

freshly ground pepper

Directions:

Using a melon baler, scoop out rounds of goat cheese and form into balls with your hands.

Roll the balls in the chopped peanuts until completely covered.

Drizzle balls lightly with honey.

Sprinkle with a little pepper.

Serve with toothpicks.

Yield: 16 balls
