HUSH PUPPIES

OIL FOR FRYING (FISH GREASE IS BEST)

1-1/2 CUPS CORNMEAL (YELLOW)

1/2 CUP FLOUR

1 TEASPOON HOT SAUCE (IF DESIRED)

1/2 TEASPOON SALT

1 TEASPOON BAKING POWDER

2 EGGS, BEATEN

1/4 CUP MINCED ONION

1/2 CUP MILK

DIRECTIONS:

HEAT 2 INCHES OIL IN DEEP SKILLET TO 35O DEGREES.

                   MEANWHILE, COMBINE CORNMEAL, FLOUR , SALT, BAKING POWDER, HOT SAUCE AND ONION IN MEDIUM BOWL.

MIX WELL.

ADD EGGS AND MILK.

MIX WELL AGAIN.

               DROP IN THE BATTER A HEAPING TEASPOON AT A TIME, NOT CROWDING THE PAN.

            AS THE HUSH PUPPIES COME TO THE SURFACE, TURN FOR EVEN BROWNING.

               REMOVE WITH A SLOTTED SPOON AND DRAIN ON PAPER TOWELS.

SERVE HOT.
