Lime & Tequila Baste

½ cup fresh squeezed lime juice (4 limes)

2 tablespoons tequila

1 clove garlic, minced

3/4 teaspoon TABASCO® Pepper Sauce

¼ cup chopped fresh coriander

½ cup olive oil

salt and pepper to taste

Directions:

In small bowl, combine first 5 ingredients.

         Gradually add olive oil and stir after each addition.

 Use as marinade for fish and shellfish.

              Drizzle over grilled fish* before serving.

Yield:  1 cup

        *I would use this with chicken!
