Linguine Fra Diavolo

2 T. olive oil

1 large onion, chopped

3 cloves garlic, sliced

1 can (28-oz.) whole tomatoes

1 can (8-oz. tomato sauce

Salt

¾ t. red pepper flakes

1 lb. dried linguine

1¼ lb. clean and deveined shrimp

½ lb. surimi (imitation crab) shredded

¼ c. fresh basil, cut into strips

Directions:

Heat oil in large skillet over medium heat.

Add onion and garlic.

Sauté until softened. ( Do not let the garlic brown.)

Add tomatoes, tomato sauce, salt and pepper flakes.

Simmer 10 minutes, breaking tomatoes with wooden spoon.

Cook linguine following package directions.

Drain.

Stir shrimp into sauce.

Cook 3-4 minutes or until shrimp is cooked through.

Stir in surimi.

Heat through, about 1 minute.

Toss linguine with shrimp sauce.

Garnish with basil.

Yield: 8 servings
