Marshmallow Pops
2 c. (12 oz.) semisweet chocolate chips
4½ t. canola oil
36-40 large marshmallows
18-20 Popsicle sticks
¾ c. colored or chocolate sprinkles
1 c. flaked coconut
1 c. ground nuts
Directions:
In a shallow micro-safe bowl, combine chips and oil.
Stir until smooth.
Thread 2 marshmallows onto each wooden stick.
Roll marshmallows in melted chocolate, turning to coat.
Allow excess to drip off.
Roll in sprinkles, coconut or nuts.
Place on waxed paper-lined baking sheets.
Chill until firm.
Yield: 18-20 servings
