MATZOH APPLE PUDDING

2 MATZOHS

2 MEDIUM APPLES

3/4 CUP RAISINS

1/2 CUP SUGAR

2 TBSP. OIL

1/4 TSP. GRATED LEMON RIND

1/4 TSP. CINNAMON

3 EGGS

DIRECTIONS:

SOAK MATZOHS IN COLD WATER UNTIL SOFT.

DRAIN OFF ALL EXCESS WATER.

PARE AND CUT APPLES INTO EIGHTHS.

COMBINE SOFTENED MATZOHS, RAISINS, SUGAR, OIL, LEMON RIND AND CINNAMON.

MIX TOGETHER WITH WELL BEATEN EGGS.

POUR INTO 1 1/2 QUART CASSEROLE AND BAKE AT 350 DEGREES FOR 35 MINUTES.
