Miniature Potato Knishes

3 c. mashed potatoes (about 2 very large potatoes (russets)

2 eggs, slightly beaten

1 large onion, minced (use a box grater if you don’t want to bite into onions)

2 T. margarine

kosher salt and pepper

3/8 c. matzoh meal

1 egg yolk, beaten with 1 T. water

Directions:

Pre-heat oven to 400°.

Sauté onion until golden.

In medium bowl, combine potatoes onion, 2 eggs, margarine, salt, pepper, and meal.

Form into small balls (about the size of a walnut) and place on a well greased baking pan.

Brush with diluted egg yolk.

Bake for 20 minutes or until golden brown.

Yield: 42 miniature knishes

(For a twist on the original, use a portion of mashed sweet potatoes with the white potatoes (ratio of 2-1).
