Onion and Sausage Quesadillas

3 medium onions, diced

3 cloves garlic, minced

2 T. butter + 1 T. oil

1-2 T. brown sugar

¾ lb. bulk Italian sausage

1½ c. shredded Swiss cheese, divided

8 tortillas (8 inches)

Directions:

             In a large skillet, cook onions and garlic in butter over medium heat until tender.

Stir in brown sugar.

        Cook fir 15-20 minutes or until onions are golden brown, stirring frequently.

Remove and keep warm.

In same skillet, cook sausage over medium heat until no longer pink.

Drain.

In a bowl, come the sausage, 1 cup Swiss cheese and onion mixture.

Place 4 tortillas on 2 greased baking sheets.

Sprinkle each with 1 tablespoon Swiss cheese.

Top with sausage mixture and remaining cheese and tortillas.

Bake at 425° for 12-15 minutes or until golden brown.

Cut each quesadilla into six wedges.

Serve immediately.

Yield: 2 dozen
