Pasta with Mushroom Sauce

1 envelope Onion Mushroom recipe soup and dip mix

2 c. water

1/2 box penne pasta, or pasta of choice

2 T. olive oil

1 small sweet red pepper (optional)

1½ lb. assorted pre-sliced mushrooms

½ c. grated Ramona cheese or parmesan

½ c. parsley

¼ c. heavy cream

Directions:

Whisk together soup mix and water.

Cook pasta.

Heat oil in large skillet.

Sauté peppers and mushrooms until tender.

Stir in soup mixture.

Cook uncovered until slightly thickened.

Stir in ¼ c. cheese, parsley and heavy cream.

Drain pasta well.

Transfer the pasta to a large serving bowl.

Add mushroom sauce and the remaining cheese.

Toss well.

Serve immediately.
