1 RED PEPPER, MINCED

SALT AND PEPPER, TO TASTE

1 TBSP. TOMATO PASTE

1 TSP. FRESH THYME

1 SMALL ONION, SLICED

SALT PORK OR BACON

2-1/2 C. WATER

2 CUPS RICE

DIRECTIONS:

FRY BACK OR SALT PORK.

ADD ONION AND THYME.

SAUTÉ A FEW MINUTES.

SEASON WITH SALT AND PEPPER.

  ADD TOMATO PASTE AND SAUTE A FEW MORE

MINUTES.

ADD PEAS AND WATER.

BRING TO A BOIL.

ADD RICE.

BOIL DOWN.

      REDUCE HEAT AND SIMMER UNTIL RICE IS DONE.
