Pumpkin Bars

4 eggs

1½ c. sugar

1 c. vegetable oil

1 can pumpkin (15 oz.)

2 c. all-purpose flour

2 t. baking powder

2 t. cinnamon

1 t. salt

1 t. baking soda

Directions:

Preheat oven to 350º.

Using a electric mixer at medium speed, combine he eggs, sugar, oil, and pumpkin until light and fluffy.

Stir together the dry ingredients.

Add the dry ingredients to the pumpkin mixture and mix at low speed until thoroughly combined and the batter is smooth.

Spread the batter in an ungreased nonstick 13 in. x 10 in. baking pan.

Bake at for 30 minutes. Let cool completely before frosting.

Icing for Pumpkin Bars

3oz. pkg. cream cheese, softened

½ c. butter, softened

2 c. sifted powdered sugar

1 t. vanilla

Directions:

Combine the cream cheese and butter in a medium bowl with an electric mixer until smooth.

Add the sugar and mix at low speed until combined. (I would do this step gradually.)

Stir in the vanilla and mix again.

Spread on cooled pumpkin bars.
