Pumpkin Waffles with Orange Walnut Butter

1 c. + 2 T. all purpose flour

2 T. brown sugar

1 t. ground cinnamon

½ t. salt

½ t. baking powder

¼ t. baking soda

2 eggs

1 c. milk

½ c. canned pumpkin

2 T. butter, melted

Directions:

In a large bowl, combine the first six ingredients.

In another bowl, combine the eggs, milk, pumpkin and butter.

Stir into dry ingredients just until combined.

Bake in a preheated waffle iron according to manufacturer’s directions until golden.

Meanwhile for orange walnut butter, in a small bowl, combine ½ c. butter, ¼ c. chopped walnuts and 1 T. grated orange peel.

Serve waffles with butter mixture and maple syrup.

Yield: 4 servings
