Red Velvet Cupcakes
(TRY IT!! YOU MIGHT LIKE IT!!)
1 (18.25) pkg. Yellow cake mix
2 tbsp. cocoa
5 large eggs
½ c. vegetable oil
1 c. buttermilk
2(1-oz.) bottles red liquid food coloring
cream cheese frosting
Directions:
Beat cake mix and next five ingredients at a low speed with an electric mixer for two minutes.
Spoon batter evenly into 24 paper-lined muffin cups.
(Filling 2/3 full)
Bake according to package directions.
Remove from pans immediately and cool on wire cooling racks.
Spread evenly with cream cheese frosting.
Yield: 24 cupcakes
Cream Cheese Frosting:
1 (oz.) pkg. Cream cheese, softened
¼ c. butter, softened
2 ¼ - 2 ½ c. sifted powdered sugar
1 tsp. vanilla
Directions:
Beat cream cheese and butter at medium speed with an electric mixer until creamy.
Gradually add sugar, beating at low speed until smooth.
Stir in vanilla, beating until mixture is blended.
