Sautéed Butternut Squash
1-20 oz. pkg. butternut squash. peeled and cut
(cut into a small dice)
1 medium onion, diced
1-3 garlic cloves, minced
2-3 T. oil, more if necessary
salt and pepper, to taste
minced chives, if desired
Directions:
Sauté the onion and garlic in the oil until onions start to caramelize.
Add the diced squash to the pan and cook over medium heat until the squash is soft.
Season with salt and pepper to taste.
Garnish with minced chives.
Yield: 4-5 servings
