Savory Lamb Shanks
(For the Crock Pot)
4 large lamb shanks, cracked
4 cloves garlic, split
Salt and pepper, to taste
1 onion, thinly sliced
1 c. baby carrots, cut in thin strips
2 stalks celery, cut in 2 inch strips
2 whole bay leaves, crumbled
1 tsp. oregano
1 tsp. thyme
½ c. dry white wine
3 large beefsteak tomatoes, diced
(Canned seasoned diced tomatoes can be used.)*
oil
Directions:
Rub lamb with garlic and season with salt and pepper.
Brown shanks in hot oil.
(I would flour mine!)
Place vegetables in bottom of the crock pot.
Add meat, seasonings and wine.
Cook on low for 8-20 hours or on high for 4-6 hours.
(*I would not add the tomatoes in the beginning, more like the last hour or two.)
