Southern Succotash

1 (16 oz.) bag frozen lima beans, cooked with a ham hock

8 slices bacon, diced

1 (16 oz.) pkg. shoe-peg corn

2 c. sliced frozen okra

1 can diced tomatoes or 3-4 fresh tomatoes, diced

salt and pepper, to taste

hot sauce, to taste

Directions:

In a large skillet, cook bacon until crisp.

Add corn, okra and cooked lima beans (reserve liquid).

Season with salt and pepper and hot sauce.

Add some of the reserved liquid as needed.

Cover and simmer until all vegetables are done.

Add tomatoes and cook until tomatoes are heated through.

Serve over hot cooked rice.

Yield: 8 servings
