Tomato
Basil Crostini32 slices French bread, ¼ inch thick
¼ c. olive oil
3 Roma tomatoes, diced (about 2 cups)
3 cloves garlic, finely chopped
½ c. shredded Parmesan cheese
2 tbsp. chopped basil leaves
salt and pepper
Directions:
Heat oven to 425º.
Place bread on ungreased cookie sheet.
Brush 2 tablespoons of the oil on bread.
Bake 4-5 minutes or until light golden brown.
Mix tomatoes, remaining 2 tablespoons oil, the garlic, cheese, basil, salt and pepper.
Place about 1 tablespoon tomato mixture on each warm bread slice.
Yield: 32 appetizers
