Vegetable Lo Mein

2 c. fresh snow pods

1 c. red pepper strips

1 c. broccoli flowerets

½ c. shredded carrots

2 t. chopped green onions

1 t. grated fresh ginger

-¼ t. dried crushed red pepper

2 cloves garlic, pressed

1 t. vegetable oil

3 T. soy sauce

1 T. water

6 oz. vermicelli, cooked

1½ t. dark sesame oil

Directions:

            Stir-fry first 8 ingredients in hot vegetable oil in a large nonstick skillet.

Stir in soy sauce and water.

Add pasta and toss.

Remove from heat.

Toss with sesame oil.

Yield: 3 servings
